A huge part of feeling good is fueling good. The problem is we can get stuck in the downward spiral of not feeling good, losing our energy, and having no desire to prepare healthy food for ourselves. Instant options may be convenient, but they only feel good on the way down (and sometimes not even then). They will not give you the energy or the mood-boost you need.
Right now most of us are cooped up in our homes as a result of sickness running rampant. What better time to ensure you are feeding your body well to support your immune system, but also fueling your mind that may be feeling a little stir-crazy right now.
So, here’s the rules. Brew a fresh pot of coffee, steep your favorite tea, or pour some ice cold water over some lemon wedges and get ready to enjoy. This should be an experience. You can even video-call a friend and prep some of these recipes together. I have tried to keep them simple as I know our resources, and energy may be limited these days. These are my favorite healthy AND yummy recipes.
Oatmeal Peanut Butter Energy Bars
I am a huge Peanut Butter lover, but you can use any other substitute if you prefer, or have allergies. These are also so easy to customize and add your own extras too. I’ve linked the recipe here.
Roasted Cauliflower/Cabbage Leaves/Brussel Sprouts
Chop up a head of cauliflower (or buy a bag prechopped florets)
Slice Cabbage into wedges
Slice Brussel Sprouts into wedges
Chop up 2 or 3 cloves of garlic
Toss in a bowl with avocado oil, sea salt, and pepper (can use olive oil if you like, however it’s not quite as healthy as avocado oil when cooking with high heat)
Sprinkle with Parmesan (optional. I actually prefer without, but I know some of you gotta have your Parm)
Bake at 400 degrees F for 25-30 mins (keep an eye on each as the small brussel sprouts may need a lot less time, and the cauliflower may need a little more)
Mexican Chicken, Sweet Potato, and Black Bean Skillet
I’m all about one-dish meals, so this is an easy, hearty, healthy meal that will energize the body and soothe the soul. Grab the recipe here.
Popcorn
Have a popcorn popper delivered right to your front door so you’re not going anywhere. My faves are the Cuisinart or a stovetop popcorn popper . Microwaveable popcorn bags are loaded with chemical additives that will not help your body or your brain, so this will be a worthwhile switch, plus you get to customize your flavours.
Pop your corn kernels fresh and hot in some coconut or avocado oil
Melt some butter on the side, then pour over popcorn
Sprinkle with toppings of your choice like Sea Salt, Shredded Parmesan or Cheddar Cheese, or heck throw in some M&Ms (my fave option)
Almond Butter Apple Cinnamon Baked Oatmeal Cups
These are SO good, and you can make a bunch, keep some in the fridge and freeze the rest so you have healthy, and yummy snacks readily available. I have linked the recipe here
Frozen Berries Many Ways
Make a parfait with yogurt, granola, and frozen fruit
Stir up some frozen fruit with a bit of peanut or almond butter, sounds weird, tastes great.
Eat it plain and frozen, sometimes that’s exactly what the sweet tooth needs.
